Sweet Potato and Chickpea Veggie Burgers
1 large sweet potato, peeled and cut into 1" cubes
1 can chickpeas, drained and rinsed
a good handful of cilantro
juice of 1-2 limes
2 cloves garlic, finely chopped
1/4 tsp ground cumin
a sprinkle of dried chili flakes, or a dash of hot sauce
2 green onions, finely chopped
1 egg *OR mix 1 tbsp chia seeds with 2 tbsp water and blended as below
1/4 or more chickpea flour *with the chia "egg" I didn't need to add any flour
salt and pepper
Roast the sweet potatoes in the oven with a little olive oil until soft.
In a large bowl mash 1/2 of the sweet potatoes with 1/2 of the chickpeas until fairly smooth. In a mini food pro blend the other half of the sweet potato and chickpeas with the cilantro, garlic, lime and egg (or chia egg) until smooth. Add to the mixture in the bowl.
Add the cumin, hot sauce or flakes, green onions, and enough chickpea flour so they hold together and aren't too soft. *Depending on the dryness of the mixture you may not need to add any flour*
Season well with salt and pepper.
Make into patties and bake, then freeze between layers of parchment paper.
I usually bake them in the oven, sometimes they fall apart on the BBQ or grill pan. They are great with avocado, salsa, lettuce, tomato, sprouts… Pictured here with a Cilantro Aioli
